Swedish restaurant has two Michelin stars – Swedish Dagbladet

The super-acclaimed chef Magnus Nilsson, who runs Fäviken magazine in Järpen, Jamtland, has two Michelin stars.

Even Hotel Borgholm, Daniel Berlin in Skåne Tranås and PM and friends get an opposite star. Karin Fransson, becoming the second woman in Sweden to get a Michelin star, for Titti Qvarnström as chef at Bloom in the park in Malmö, who received a star last year.

– I feel absolutely elated. It is like a diamond in the crown. We have fought long and it has not always been easy. This means a lot to me, for the restaurant and Oland, says Karin Fransson who runs Hotel Borgholm on Öland, to SvD.

The next week they open for the season and throughout the day, the phone has been hot.

– we had good with reservations before, but now hope that it will become even more and that we will attract more international guests, says Karin Fransson.

Last year, the Nordic countries their first Michelin guide but without any Nordic tavern was awarded a third star. The answer then was that no Nordic restaurant is good enough to deserve three stars, according to Michael Ellis, director of Michelin Europe.

This year the Michelin Guide thinking about. Both Geranium in Copenhagen run by Rasmus Kofoed, who previously won the Bocuse d’Or and Oslo tavern Maaemo get a third star.

Stockholm will have to wait on a third star, but may on the other hand, a new – small Sushi Shoo at Odenplan assigned, perhaps a little surprisingly, a star of the year guide.

– You can say that it is a record year for the Nordic region, says Michael Ellis, according to the TT in a webcast press conference in Copenhagen.

Noma is without a third star, which is perhaps not so strange as René Redzepi previously said he closes Noma to reopen in an urban agriculture in Christiania in Copenhagen.

The first wizard came in 1900, then got everyone who bought a car a guide (when there were only 3,000 cars in France) and the main reason was to guide people to run around and thereby tear on the tires.

In the early content wizards information about where they could refuel, how changed the tires, as well as where you could eat and stay.

In the 1930s, introduced the system of stars. The system of stars was introduced in the 30s.

Michelin believes just the food. Service, environment and other graded with cutlery.

Three stars means a restaurant is “worth a trip in itself”

One Star – “exceptionally good restaurant in its category “.

the inspectors are looking at:

the quality of the raw materials

craftsmanship – how well you succeeded with taste and cooking.

the personality – how the chef manages to convey its own expression.

Value for money

The quality of time – there should be an equally amazing experience no matter when you visit the restaurant.

All inspectors is somehow educated in the food and restaurant. In addition, they receive a six-month internal training. They are always anonymous and pays for itself.

Bib Gourmand

Stockholm also got a new Bib Gourmandrestaurang: Nook in Södermalm.

Bib Gourmand indicates a restaurant that serves delicious food to a reasonable price.
